One of the most important factor when designing a hydraulic system or replacing a hose assembly is working pressure for the application.  The working pressure is the HIGHEST amount of pressure (including spikes) that the hose will operate under.  An important consideration to factor in is the temperature range that the hose will be working under as this will affect the pressure rating too.  Thus the working pressure rating of a system should never be guessed or assumed. It needs to be worked out and accounted for by the designer.

Another important detail to know is if the system pressure is dynamic or static.  Dynamic pressure is when the system can have constant fluctuations and shocks/pulses, whereas static pressure is when the system pressure is constant bereft of any shocks or pulses.

Also, the entire hose assembly should be equal to the system pressure rating.

For e.g. for a 2500 psi pressure rating including spikes, you cannot have a hydraulic hose rated to 2500 psi with end fittings  rated lower than that. All the components in the system need to be rated at 2500 psi working pressure.  In other words the system pressure rating is only as good as pressure rating of its weakest point.

With respect to burst pressure, most industry standard hydraulic hoses have a 4x times of working pressure, as the burst pressure.  So if a hose is rated at 5000 psi working pressure, the burst pressure will be 20000 psi.

Now,  if you have done your due diligence and ensured, among other things, that the entire system and all its components (i.e. hose, adaptors, fittings, connectors etc.) are all rated equal to or above the working pressure for the temperature range, you will have very low risks of hose failure and you will be able to avoid unnecessary downtime, injury risks to personnel and the resulting environmental consequences.

Do consult with a hose specialist at Inflex at the design stage of your hydraulic system or prior to replacing a hydraulic hose assembly.
